Try this fresh summer salad from Gourmet. Would be great to serve at your next cookout!
- 3 ounces baby arugula (6 cups)
- 1 teaspoon fresh lemon juice
- 1⁄8 teaspoon salt
- 2 tablespoons olive oil
- Toss together arugula, lemon juice, and salt in a bowl.
- Drizzle with oil and toss to combine well.
I had a salad like this at an expensive Italian restaurant in Toronto. You can't get much simpler than this recipe and it is still so flavorful. Personally I like a bit more lemon juice so I added about a tablespoon.
I love arugula so this recipe allowed me to enjoy it without overpowering the distinct flavor of these greens. Thank you.
I absolutely LOVE arugula and this is my favorite way to eat it. I add some diced plum tomatoes and a little parmesan on top. I top it with a broiled piece of chicken breast and its a great lunch that I eat every week. Delicious!
