- 2 tablespoons olive oil
- 2 tablespoons butter
- 1⁄2 red onion
- 2 garlic cloves, minced
- 1 bunch arugula, rinsed and trimmed
- salt and pepper
- 8 ounces hot pasta

- Heat oil and butter in a medium skillet over low heat; stir in red onion and saute until crisp tender, about 3 minutes.
- Stir in garlic, saute 1 minute.
- Add the arugula, saute, stirring, about 2 minutes.
- Season with salt and pepper. Toss with hot pasta and serve.
