Artichoke-Crab Bake

From a can of "Fanci Food Premium Gourmet Artichoke Hearts." I used fat-free mayo and reduced fat cheese, and I added fresh mushrooms, garlic, thyme, and a dash of Old Bay. Make it your own! This is easy, elegant, versatile, and healthy!

I layered the baking dish with artichokes then sprinkled shredded mozzarella then I added the crab mixture. I use imitation crab when I make this dish. I added cayenne pepper, black pepper, and parsley to the mix. I cook for 35 min covered then take dish out sprinkle more mozzarella cheese and paprika for color, set oven to broil, and cook for a minute or two till the cheese bubbles and browns a bit. Yummmm!! Been making this for years!

  1. Preheat oven to 375 dgrees F.
  2. Combine crabmeat, Swiss cheese, green pepper, onion, and salt. (And any added spices.).
  3. Blend mayonnaise and lemon juice; toss with crab mixture.
  4. Spray a baking dish with non-stick cooking spray. Place artichoke hearts on bottom of baking dish; pour crabmeat mixture over the artichokes.
  5. Cover and bake for 35 minutes or until heated through.
