I ate at American Bandstand in Kansas City. They had the most wonderful dish there--if you have a chance try it. Here is me trying to recreate it.

Directions

  1. Fry the bacon in the butter.
  2. Add garlic.
  3. Dredge chicken in flour.
  4. Add to the oil; brown.
  5. Add wine.
  6. Add salt and pepper.
  7. Add artichokes that have been chopped along with juice.
  8. Mix flour to chicken broth.
  9. Add to pan.
  10. Add capers
  11. Cook till chicken is done.
  12. Just before serving, add tomato and spinach.

Delicious! We really enjoyed this dish with the very flavorful sauce and the mix of artichokes, capers, spinach and tomatoes. I served this over linguine and it was purely delightful. Thanks Dienia.
