Thank you for a tasty, quick and easy recipe. I added some cajun spice to my chicken pieces for a little kick and some black pepper to the dish. I used par-boiled brown rice and red kidney beans. The end result was just a little bitter - probably the canned tomatoes I use, so will probably add a little sugar next time. A lovely, hearty meal :)
Made this for the February Diabetic Forum and this was such an easy and delicious recipe! I did cut the recipe in half and used black beans and the artichokes and I will definately make this again...sooo easy and quick. Thank you for posting the recipe.
We loved it and I loved that it could be ready in less than 30 minutes. Made half a recipe using black beans and the artichokes. It was served with a side salad. I will be hanging on to this one. Made for the Aussie Swap.
This made a good dinner for us tonight. The recipe was easy to follow. My DS made this for us all by himself and he is just learning to cook. If you study our picture carefully you will notice that he unknowingly substituted some cubed pork for the chicken, so I suppose ours could be called Arroz con Puerco. Made for AZ/NZ swap.
This was much appreciated today after a big day of sight seeing as its unbelievably fast to put together and cooked in exactly the amount of time given. I used the artichokes and we loved the briny taste and change in texture when we came across a piece. I used canellini beans and the bay leaves. Just before serving, I tasted the dish and threw in a handful of chopped fresh coriander and served lime wedges and Kaitaia Fire (NZ's answer to Tabasco) on the table. I would definately make this again with those additions.
This was really very good! I did use less chicken--24 oz instead of 33--and I certainly didn't notice a lack of meat! I wasn't sure if I should drain the tomatoes so I did not, and that worked out well. I did use brown rice, which actually took the cook time closer to an hour than 30 minutes. I used about half a can of artichokes, and threw in a half cup of peas instead of beans. Finally, I took Annacia's suggestion and used chili powder instead of turmeric. Absolutely delicious and easy 1 dish meal. I didn't add the red pepper nor the beans. I did add the artichoke hearts and I really liked that addition. Next time I will add some red hot pepper flakes for some heat :) Excellent and will make again. Made for NZ/AUS Make My Recipe Swap Edition 9
DH loved this recipe! I used a little over 2 pounds of chicken, doubled the garlic, used 1 can diced tomatoes (14 oz) and one 10 ounce can of rotel tomatoes with chilies, a whole can of northern beans, 1/2 teaspoon pepper flakes and 1/2 teaspoon ground mustard and then made as directed. I did not have turmeric powder so I left out. I did add the artichokes and that that was a very nice touch. I think some polish sausage would be a nice addition. Thanks CF for a great meal. Wow, wow, wow! This is now one of my favourite dishes on Zaar! It was so simple to put together, and had a wonderful blend of flavours! I used brown rice, so I used a 1/4 cup more chicken stock than called for. I find brown rice tends to need more liquid. I also used 2 fresh tomatoes in place of the canned, as that is what I had. Yellow and Green Peppers, and black beans were my choice and I used a little fresh cilantro as well. Turned out wonderfully! We loved this, thanks chef floWer! As a side note, the next day I took the leftovers, added some shredded cheddar and put it all in whole wheat wraps, baked them for 10 minutes and it was amazing!!
