Aromatic Stewed Mushrooms

"Dish is from The Encylcopedia of Italian Dishes and is extremely simple. If you love mushrooms, give this one a try. I only used Portobello mushrooms, but you could use any type of field mushrooms."

  • Slice mushrooms fairly thickly.
  • Heat the oil in a large frying pan.
  • Stir in the garlic, after about 2 minutes, the mushrooms.
  • Cook for 8-10 minutes, stirring occasionally.
  • Season with salt& pepper, and stir in the parsley.
  • Cook for 5 minutes more, and serve at once.

  3. I used portobello mushrooms and served them over BBQ steak. It was just great. Easy to do too. I fried them up in a fry pan on the side BBQ burner. I used chives instead of parsley and it worked well. Thanks Chippie.
     
  4. Used regular button mushrooms, served at a recent brunch, mushroom lovers gobbled up these quickly!! Next time I will try the portobellos, recommend you make these as a side dish with steak too!!!!
     
  5. YUM! I am writing this after having sampled one bite. These are really, really good! I used baby portabella's, my best olive oil, sea salt, and freshly ground pepper. Unfortunately, I had no fresh parsley, but they don't seem to have suffered from the use of dried. Thanks for sharing this, I'll most definitely be making it again! :)
