  • Boil potatoes until done.
  • Slice when cool.
  • Add all the ingredients together.
  • Toss and chill about 2 or more hours.

  1. We live in Fresno, CA where there is a huge Armenian population. My Armenian friends make this often, but they use lots of fresh parsley, instead of mint in their version. It's delicious!
     
  2. Made this for a pot luck and everyone enjoyed. I was concerned that people would miss the mayo in the dressing but this was much better. The mint was a perfect amount. Very subtle. I used fresh. The lemon juice did come through as a more dominant flavor but was very delicious. The olive oil contributed to it tasting rich and addictive. I think I added more salt than it called for.
     
  3. i reading this recipe, it strongly reminded me of tabouli. of course there are no tomatoes bulgar wheat, or cukes, but i would use a combo of parsley and the mint.. and if you rub the dry mint in your hand for just a few seconds, it makes the flavor much more pronounced
     
  4. Love this salad - it made a convert of the members of my family who insisted a potato salad had to have mayonnaise or sour cream in it. Everyone loved it and asked for it again. Yum!
     
  5. 5 stars and a heart in my cookbook! That means it's a keeper! I liked it with lime juice too.
