Posting here for safekeeping. Looks simple but good. Please do not omit the mint, as it is a key ingredient:)
Directions:

Boil potatoes until done.

Slice when cool.

Add all the ingredients together.

Toss and chill about 2 or more hours.

This is YUMMY! I used a tablespoon of dried mint and it was great. You do NOT have to use fresh if you are unable to find it.

i love the combination of lemon and potatoes, so this recipe worked for us. i used fresh mint from my garden and served this at room temperature. this was made for zwt 4.
