Posting here for safekeeping. Looks simple but good. Please do not omit the mint, as it is a key ingredient:)
- Boil potatoes until done.
- Slice when cool.
- Add all the ingredients together.
- Toss and chill about 2 or more hours.
i reading this recipe, it strongly reminded me of tabouli. of course there are no tomatoes bulgar wheat, or cukes, but i would use a combo of parsley and the mint.. and if you rub the dry mint in your hand for just a few seconds, it makes the flavor much more pronounced
Love this salad - it made a convert of the members of my family who insisted a potato salad had to have mayonnaise or sour cream in it. Everyone loved it and asked for it again. Yum!
