Armenian Lentil Soup

"From Neva & Jim Brackett's 7 Secrets Cookbook. Makes a very healthy meal that's delicious! Spinach and tomatoes are added after the cooking is completed to keep their distinct green and red color, and give the soup eye appeal. I usually freeze half of this recipe to feed my family of four again later."

  • Place all ingredients in kettle except spinach and tomatoes. Bring to a boil, reduce heat, and simmer for 1 hour or until lentils are tender.
  • Add spinach and simmer 1 minute. Add tomatoes just before serving.
  • Leftovers can easily be frozen for another meal. I usually just freeze the soup in a ziplock freezer bag. Take it out the day before and put it in the fridge to thaw. Then reheat over the stove in a pot.

  1. What type of lentils brown, green or red. Do you have to soak the lentils for some time? Lentils should always be rinsed first as well, no?

  2. This was a delicious stew that I recently made. My 14 year-old daughter even commented on it that it was the best ever. She went back for three helpings the night we made it. I did substitute 4 of the 10 cups of water with chicken broth, because I didn't have any chicken-flavored bouillon. I also did not have frozen spinach, so I chopped up some fresh spinach that I had, a bunch of beet greens, and a bunch of rainbow chard (large stems removed) I also added some potato to use them up. Other than that, nothing was taken away or added, and it truly was a divine dish. I froze what we didn't finish that night, and recently thawed it out, and only got two bowls out of it, because my daughter ate the rest! It has a ton of great flavor, and it was fresh and delicious. I came on not only to review this dish, but to be sure to print out the recipe, as I will definitely be making this again. Another side note, I said I might have to make this for our next potluck at church, and my daughter requested I make a double batch, so we'd have some left!. This might not be so funny if it wasn't for the fact that we tease her about hating anything green. Considering all that was put in this dish, we all found it worth raving about!

  4. This was really delicious. My DH and I really enjoyed it. This recipe is not kid-friendly. I used almost everything except I used chicken bullion and soy sauce. Loved the touch of ginger, but I guessed as to how much because there is no measurement. I will definitely make this again. Thanks for posting.

Update: We've moved back to the states, and are experiencing the joys of living in Wenatchee, WA for the first time! I'm spending most of my time in the kitchen canning, freezing, and drying fruit now and loving it! We are a couple, Jason and Mollie, that loves to cook together. We have two wonderful DD's, Enjoli (9) and Emily (7) that make life so much more fun! I, Mollie, studied Nutrition so I try to make most of our meals healthy while still tasting great! Our girls love helping us cook...and eat! We're vegetarian and love eating healthy without missing any flavor! We try to eat mostly vegan, so we have many vegan recipes posted. We are world traveling missionaries and students that have visited many countries and have lived in the States, South Korea, and are currently in the Philippines. So we always need to adjust our menu based on the food available.
