- 3 (680.38 g) can black-eyed peas
- 226.79 g can green beans
- green pepper
- red onion
- 118.29 ml oil
- 236.59 ml vinegar
- 236.59 ml sugar
- 113.39 g pimientos
- salt and pepper
directions
- Drain the peas, beans, and pimento. Chop onion and pepper, I add them to the pea mixture to look the prettiest, it's all to taste. Add oil, vinegar, sugar, salt, and pepper-stir gently. I let it sit at least a couple of hours to overnight.Can be made ahead of time. It travels well and is a crowd pleaser.
