Made this today and it has all disappeared already.- my family really enjoyed it. My daughters loved the moist apricots and the sweetness. I expected more of a loaf or bread style cake...but rather it was approx 4cm high (not a dissapointing loaf though!). The apricots moistened beautifully in the tea and gave a great flavour. A great loaf for addition to lunchbox or with a cup of tea/coffee. The tea flavour did not come through in the finished loaf. Photo being posted also

Ingredients Nutrition


  1. Soak apricots in hot tea for 1 hour till tea is absorbed.
  2. Preheat oven to 180 degrees.
  3. Grease and line loaf pan - 13cms x 25cms.
  4. With electric mixer, cream butter and sugar
  5. Add egg and beat well.
  6. Fold in flour and apricots.
  7. Spoon into prepared pan.
  8. Bake 40-45 minutes.
  9. Cool in tin for 5 minutes then turn onto wire rack to cool.
