I doubled the recipe as my container of apricots was 1K, I froze them in a plastic container and once frozen I chopped it up so I could fit it into the food processor and added the sugar and lemon juice but after several minutes of trying to process it I took half of it out and it processed without difficulty to a lovely creamy smooth texture. I served it with Diet Chocolate Sauce 466271 for a guilt free dessert that we all enjoyed. Thank you Nancy's Pantry, made for Everyday A Holiday tag game.
