Sweet and tart, with a delicious oatmeal cookie crust. Great for the holidays. Fast and easy to make. Can be made with fresh apricots, too. Omit water in that case.

  1. Combine filling ingredients and chop fine in food processor.
  2. Combine crust ingredients and press 1/2 into the bottom of an 8 x 8 cake pan.
  3. Pour in filling and spread evenly.
  4. Sprinkle top with second 1/2 of cookie mixture.
  5. Bake at 350 for 30 minutes.
  6. Cool and cut in small squares.
