This cake recipe was given to me by a friend at work. It needs to be made a day ahead. It is so moist and wonderful. You will definately want to share this one with your friends.
- 1 yellow cake mix
- 3⁄4 cup apricot nectar
- 3⁄4 cup oil
- 4 eggs
- 1 teaspoon lemon flavoring
- 1⁄2 cup powdered sugar
- 2 lemons, juice of
- Mix all ingredients well.
- Bake 1 hour in 300 F oven in a greased and floured bundt pan.
- Mix glaze ingredients and pour over cake while still hot.
I grew up with this a recipe almost the same as this one, the only difference is that we use a lemon cake mix instead of yellow. I have always loved this recipe, and everyone that has tried it has too.
This recipe came to me from my best friend about 20 years ago & I have made it many times a year ever since & for all age groups. EVERYONE loves this cake. I actually mailed it to our son when he was in college! I use lime instead of lemon in the glaze. If the cake is crumbly you're probably cooking it too long.
