  1. Place muesli, apricots, honey and warm melted butter in food processor.
  2. Process 2 - 3 minutes till well combined.
  3. Roll into balls.
  4. Coat balls in coconut.

These were really easy and simple to make and are really great for a healthy dessert! I love the taste of honey, coconut and dried apricot, and I really do believe they make for a great combination!

What a wonderful recipe!!!! Luv these little balls, they are so tasty! Mmmm!
The honey and apricot go so well together and the muesli adds a wonderful crunch and flavour. Perfect little snacks!
I got 38 chunky balls out of the whole recipe.
I think next time I might reduce the butter to 60 g or even less as my mixture was pretty sticky and wet. It was easy enough to work with, but it could have been a bit drier and cutting a bit of the butter would make these even healthier.
I only needed about 1/2 cup of coconut for rolling the balls in and it reallly adds a great taste to these. YUM!
