You can serve this unusual dressing over cottage cheese, fruit salad or simple greens.
- 1 (8 ounce) can apricot halves, drained
- 1 ounce sour cream or 1 ounce plain yogurt
- 1⁄4 cup honey
- 1 tablespoon lemon juice
- 1 pinch salt
- Process all ingredients in a blender until smooth.
- Chill for at least 2 hours and serve over the salad of your choice.
This is a fantastic dressing and it is hard to believe there isn't any oil. I reduced the recipe by half and served the dressing over a baby spinach salad made with fresh strawberries and pecans.
