  • Heat oil in large skillet or dutch oven.
  • Cook onions and garlic for 2-3 minutes.
  • Add chicken and brown on each side, another 2-3 minutes.
  • Add curry powder and ginger and mix well, coating the chicken.
  • Add the remaining ingredients, using just enough chicken broth to cover all the ingredients. Mix well.
  • Bring to a boil, then reduce heat, cover and simmer for at least 30 minutes to allow the chicken to get tender and the flavors to mix well.
  • Serve over rice.
