Apricot-Cranberry Sauce

"This recipe is from Ken Kostick's "3 Easy Steps to Great Meals" and is my favourite cranberry sauce to serve at Christmas. I leave it chunky, but Ken notes in his cookbook that you can puree it for a few minutes if you prefer a smooth sauce."

  • In a large bowl, combine the cranberries, apricots, raisins and spices. Mix well, then set aside.
  • Combine the water and sugar in the saucepan. Bring to a boil and reduce the heat to medium. Cook, stirring constantly, until the sugar is completely dissolved.
  • Add the dried fruit mixture and vinegar. Bring the mixture to a boil and reduce the heat. Simmer the sauce for 10 minutes or until the fruit is tender.
  • Let sauce cool and serve.
