This recipe is a winner on all counts. I made it as directed, and really enjoyed the flavor. It's very low-cost (less than 50 cents per serving, when using dried beans... I was given the apricots for free). I made it quickly by chopping the garlic in a food chopper, then adding the half-onion and letting the food chopper do the work. I'm not vegan but am trying to incorporate some non-meat protein in my diet. I had some dried garbanzo beans, which I don't enjoy much, but the flavors in this recipe hide the garbanzo beans & make it an enjoyable meal. The first time I served this I was out of white rice so I used wild rice, but it turns out that the wild rice flavor was too strong. The next time I ate it with whole-wheat spaghetti and it was perfect. Information: I also tried using the food chopper on the dehydrated apricots but it didn't work...they were too sticky. So you have to cut those by hand. Here's a tip for those of you using dried beans: despite pre-soaking, the beans don't get cooked all the way in this recipe. Next time, before I cook the onions/garlic, I will bring the beans to a boil and let them simmer while I do all the chopping. I'm considering adding a stalk of celery into the onion/garlic food chopper too (just to sneak some fiber into the recipe). I used up all my apricots but I have some dried mango so next time I'll use that... although I must say that the apricots made this meal a perfect taste. Overall, this is 5 stars because of price, ease, nutrition, and flavor. It's not very common to find a recipe that meets all those criteria.

  1. Heat oil in a small saucepan over medium heat. Add onion and garlic. Cook, stirring frequently, until onion is tender, about 5 minutes. Add small amounts of water if necessary, about a tablespoon at a time to prevent sticking.
  2. Add remaining ingredients to saucepan. Mix well. Bring mixture to a boil, then reduce heat to medium-low, cover and simmer 20 minutes.
  3. Serve over rice or couscous.
