- 1 (8 ounce) package cream cheese
- 1 cup blue cheese, crumbles
- 1 lb dried apricot (unsulfured, they are brown)
- 1 cup pistachios, crushed

- Mash together the cream cheese and blue cheese crumbles with a fork. Roll into small marble sized balls and refrigerate for 10-30 minutes.
- Split open each apricot so it looks like a clam. Stuff with a cheese ball and sprinkle pistachios on exposed cheese.
