A no-effort ice-cream that looks and tastes beautiful. Recipe can be made a day ahead. You could also add a tablespoonful or two of Grand Marnier if you want to be fancy!
- 2 cups vanilla ice cream, softened slightly
- 1⁄2 cup chopped roasted macadamia nuts (unsalted)
- 1⁄4 cup chopped plain sweet cookie
- 1⁄4 cup of chopped glace apricot
- Place all ingredients in a medium sized bowl.
- Stir until combined, and spoon into 4 serving/sorbet glasses.
- Freeze till firm.
