Applesauce & Raisin Muffins

This muffin recipe is a hit with all my family! It's easy and delicious. They also freeze well.

  1. Preheat oven to 375°F.
  2. With mixer beat eggs slightly.
  3. Add sugar, oil and applesauce; beat thoroughly.
  4. In a separate bowl, mix dry ingredients together.
  5. Add dry to the applesauce mixture; mix well.
  6. Stir in raisins.
  7. Fill greased muffin tins 2/3 full and sprinkle each muffin with a bit of brown sugar.
  8. Bake for 15-20 minutes.

We really liked these muffins! I didn't have golden raisins, so I used regular ones, but I soaked them in warm water for 10. min. then drained them before adding them. The brown sugar tops are nice too! Thanks Carol :)

Very nice muffin. I had to bake something for a church function this morning and I've been wanting to try this. Everyone enjoyed the muffins. BTW, I used regular dark raisins.
