I don't remember where this recipe came - except I know my kids really like it!
- 1 cup flour
- 1⁄4 teaspoon salt
- 1 1⁄2 teaspoons baking powder
- 1 tablespoon melted butter
- 1⁄2 cup milk
- 1 beaten egg
- 1⁄2 teaspoon vanilla
- 1 1⁄4 cups applesauce
- Combine all ingredients in mixing bowl. Mix well.
- Pour onto hot griddle.
- Serve with maple syrup and butter.
I absolutely love these pancakes! They were so tender and fluffy, not to mention flavorful! There were three things I did that differed from the specific recipe: I used an all-natural maple applesauce from a farm in Vermont, I ran out of milk so I used evaporated, and I added 1 teaspoon of cinnamon. These were served with warmed real maple syrup. The apple flavor was there in the cakes before I added syrup and they were delicious, the maple made it even more pronounced and super yummy. I will definitely make these again and again :D
I used cinnamon applesauce to give it more flavor but that didn't improve the recipe. We could taste the cinnamon applesauce a little but the rest was bland. So we won't be using this recipe anymore.
I was not pleased with the results. Will not use recipe again.
