I have this exact recipe in a church cookbook with one exception - it has a topping that is added prior to baking. Topping: 1/4 cup quick oats, 1 Tbsp. packed brown sugar, 1/8 tsp cinnamon, 1 Tbsp butter melted. Put muffin batter in muffin pan, combine all topping ingredients and sprinkle over batter. Will obviously add more fat and calories, but gives a nice crunch. The recipe is perfectly fine without the topping. I plan to add more spices next time as I think it is a little bland.
Used OF rolled oats instead of quick oats which gave the muffins a nice chewy texture. I also used a whole egg rather than just egg whites and the raspberry applesauce that I had on hand. Al usual I went a little lighter on the sugar with no ill-effects. Nice easy recipe. The kids really liked it.
Very heavy dense muffins. I made as written except used half whole wheat flour for the flour. I also added chocolate chips but they could not help the heaviness. I had to cook them for 25 minutes to get them done. Maybe adding some baking soda and salt would help them rise more. These turned out more like a thick dense apple bread with lots of texture from the oatmeal. My kids didn't like them and they usually love muffins.
Tasty! I made mini muffins, with the intention of giving them to my 15 month old daughter, but I think I'll end up eating most of them :) I used whole wheat flour, a whole egg, skim milk, replaced the oil with applesauce, and used applesauce I got from a local orchard (which is sugar free and has added spice). I think the extra spice make them much more flavorful than with the cinnamon only. So much healthier without all that butter. And I feel better giving them to my little girl knowing they're better!
I added extra cinnamon,dried apples, and sunflower seeds.I also used the whole egg.Very good and will make a hearty snack or breakfast on the go.Thank you!
These are pretty good and my kids just gobbled them back, but next time I think I might add some more cinnamon.
I found if you do not want to add the oil, you can add that much more applesauce; tastes great and less calories
i have to re- review this. i took these to work today for a meeting along with some apple butter and orange marmalade and everyone said they were very good. so i tried another one (without any condiments) and they were very good. apparantly the flavor developed some after sitting overnight.
A great muffin! I also added nutmeg and doubled the cinnamon. A lovely, moist texture. Thanks for a great recipe!
