  • Heat oven to 400.
  • Line 12 medium muffin tins with paper cups(optional)(spray muffin tin with cooking spray w/o paper cups).
  • Combine oats, flour, cinnamon, baking powder and baking soda.
  • Add applesauce, milk, brown sugar, oil and egg white.
  • Mix just until dry ingredients are moistened.
  • Fill muffin cups almost full.
  • For topping combine remaining ingredients. Sprinkle evenly over batter.
  • Bake 20-22 minutes until deep golden brown.
  • Serve Warm.

  1. These were great! I aded about 1/8 c chopped nuts to the topping, I also doubled the topping amount as suggested. I also used the whole egg.
     
  2. I made these as mini-muffins. A double batch yielded 75 muffins. Baking time was 12-14 minutes. I used one whole egg for a double batch. A little vanilla extract, nutmeg and allspice added to the batter were good additions.
     
  3. Not bothering with topping. Instead, subbed flaxmeal for egg. Whole for skim (blech!), EVOO and pumpkin spice. Added 1/2 each mini morsels, chopped walnuts and raisins (I like mine loaded with fun yummies). Batter now tastes really yummy.
     
  4. This is the exact recipe from the Quaker Oats website. You shouldn't take credit for it. Also, I'm updating my review. These had NO taste. They were dull and boring. Even the strusel topping couldn't save them.
     
  5. Yummy! And I did double up on the streusel!

Tweaks

  1. Used a whole egg, added 1/2 tsp salt, and doubled the strusel
     
  2. Very tasty! I doubled the topping and it was the perfect amount. I did forget to spray the muffin liners and am now regretting it! Instead of using the oil I replaced it with the same amount of applesauce and I also used a whole egg.
