ingredients
- 354.88 ml flour
- 4.92 ml baking powder
- 4.92 ml baking soda
- 2.46 ml salt
- 4.92 ml cinnamon
- 2.46 ml nutmeg
- 158.51 ml packed brown sugar
- 2 eggs
- 78.78 ml butter, melted
- 236.59 ml raisins
- 177.44 ml chopped walnuts
- 354.88 ml rolled oats
- 236.59 ml applesauce
directions
- Heat oven to 350*.
- Grease and flour a 9 inch loaf pan.
- Sift flour, baking powder, baking soda, salt, cinnamon and nutmeg into lg mixing bowl.
- Add brown sugar, eggs, and all remaining ingredients.
- Mix until throughly combined.
- Pour into pan.
- Bake for 55 minutes, or until a pick comes out clean.
- Cool on wire rack.

This is great, Inez. The loaf turned out moist and delicious, and had just enough spice and sweetness to be satisfying. I took some to work for a treat and all those who tried it wanted to know when I would be baking it again. (They don't cook, but they love it if I do). I like the fact that I can get my fiber with this delicious sweet bread! I'll be making this often.

First off, I turned mine into muffins rather than a loaf, but that didn't hurt them at all. I decreased the amount of butter by 1 T and increased the amount of applesauce by about that much or a little more. This recipe is surpisingly light for an oatmeal bread. I left out the raisins, which gave them a simpler taste, but next time I'll try dding them.

We have enjoyed this bread for breakfast the last few mornings. I was very surprised at the light texture. For some reason, I thought it would be heavier but the light texture is a plus in my opinion. The spiced flavor was detectable but delicate. The raisins and walnuts were good too. Thanks for sharing your recipe.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
