  • Mix all ingredients.
  • Bake at 375 degrees for 18-20 minutes or until puffed up and golden brown on top.
  • Cool on a wire rack, in pan, for 5 minutes and then turn out onto the rack to finish cooling.

  4. These were definately yummy muffins! I think I may add just a tad more cinnamon for personal taste and next time I'll use Splenda instead of sugar since I'm diabetic. All in all an awesome snack!
