Apple Walnut Cake

My wife found this in her Country Magazine, and for a change, I hardly modified this one at all. It's pretty much as we found it and tastes great.

  1. In a large bowl, beat together eggs, sugar, oil, and vanilla.
  2. Sift together the flour, baking soda, cinnamon, nutmeg, and salt, and mix into batter.
  3. Fold in apples and nuts, and spread into a 9"x13"x2" baking pan.
  4. Bake at 325 degrees F for 50-60 minutes or until cake tests done with a toothpick.
  5. Cool, and ice with cream cheese frosting, if desired.
  6. It doesn't really need it, but it sure tastes great with it.
  7. To make frosting, combine all ingredients in a small mixing bowl, and whip until smooth.
  8. If too thick, thin with a little milk.
