This is a nice cake that you can throw together quite quickly and easily. Chances are you have all the ingredients on hand. Adapted from Bon Appetit, August 1985
- 1 cup sugar
- 6 tablespoons butter, room temperature
- 1 egg, beaten to blend
- 1 cup all-purpose flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon allspice
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon freshly grated nutmeg
- 1 pinch salt
- 2 cups peeled cored and chopped granny smith apples
- 1⁄2 cup chopped walnuts

- Preheat oven to 350 degrees. Butter 8-inch square baking pan. Combine first 3 ingredients in large bowl and mix well with wooden spoon. Add flour, baking soda, allspice, cinnamon, nutmeg and salt and mix well. Fold in apples and walnuts. Spoon into prepared pan. Bake until top is browned and tester inserted in center comes out clean, 25-30 minutes. Serve cake immediately.
