  1. In a large bowl, combine oil, applesauce, eggs, sugar and vanilla.
  2. In a separate bowl, combine flour, cinnamon and baking soda.
  3. Gradually add dry ingredients to oil mixture.
  4. Stir in apples and nuts.
  5. Pour into loaf pans, bake at 325F for 1 hour and 10 minutes, or until a knife inserted in the center of loaf comes out clean.
  6. Cool 10 minutes before removing from pan.

I made this recipe for 16 coworkers. I doubled the amounts of the ingrediants hoping to get 4 loaves. I only got 3 loaaves and the batter was hard to stir when it came to adding the walnuts and apples. The end result was excellent and the bread was consumed in a matter of minutes. Everybody loved the bread but they love it when anybody brings in homemade snacks. I was very happy with the taste of the bread.

Just what the doctor ordered! I loved this so much that I made up one batch and 20 minutes later decided to make another and am I glad I did! My neighbor got one loaf and the rest we ate and I froze a loaf. Great for breakfast heated with butter and a sprinkling of cinnamon sugar. Yummy!
