Combine parsley, vinegar, olive oil, apple juice, basil, honey, salt, mustard and pepper in a blender or food processor. Process until smooth. Serve over salad. Enjoy!
Marvelous dressing, Sharon. Great way to sweeten without refined sugar and the apple flavor really comes through. I added parmesan to our spinach salad and loved the saltiness with the mild sweetness of this vinaigrette.

We enjoyed this fresh delicious salad dressing on a spinach, apple, and toasted walnut salad which complimented the sweet dressing very well.
I didn't use all the instructed parsley...just 1/4 cup since that was all I had on hand and thought it was just perfect.
The big surprise was the fresh basil which lifts this recipe above the usual honey/mustard type dressings. My DH loved it and I know we'll be making this often, especially to put on a coleslaw sort of salad, or to toss with some chicken salad instead of mayonnaise.
