Apple Summer Slaw

"Here is a low fat slaw that looks very good. It was served with Maple Glazed Pork Tenderolins and I have posted that recipe also. This would be an very simple, great tasting, low fat meal. This recipe is from Pillsbury Cool Cooking for Hot Days cookbooklet, July 1997 #197."

  • In a large bowl, toss together all salad ingredients.
  • In a small bowl, blend together the dressing ingredients. Pour this over the salad mix and toss until well coated with dressing. Keep refrigerated until time to serve.

  1. Oh this is very good, I love the addition of the apple pie spice, I made this in the morning but won't add in the apples until serving time, such as Spicy Gal I also added in some dried cranberries, we will enjoy this I am sure, thanks Lori!
     
  2. Absolutely wonderful. We added a Trader Joe's mix of cranberries & golden raisins. It really adds a great complementary flavor. Can't say enough about this recipe, I love to make it for company.
     
  3. I love this and make it over and over! I leave out the green onions, because I seldom have them. Any type apple will do, but I like the tart ones best. Blend the dressing in a small blender, and just throw in a touch of cinnamon, nutmeg, and cloves. Oh, and I also use splenda. Practically NO calories!
     
  4. A new favorite!!! This was deeelicious! Mom's going to serve it to her next crowd. I didn't have apple pie spice so I dumped in a smidge each of cinnamon, nutmeg, ginger, cloves & allspice. Delicious, easy & healthy! made for VegSwap 8/08.
     
  5. I am taking this to a BBQ later today. Very light and refreshing! I added a bit more oil & vinegar to extend the dressing. I also added sweetened dried cranberries for added color and zing. I omitted the apple pie spice because I didn't have any on hand. I did not substitute for it. Just lovely! Thanks a bunch for posting Lauralie. I will be adding a photo as well.
