  • In a bowl, combine the flour, sugar, baking powder, baking soda and salt.
  • In another bowl, whisk the eggs, butter and vanilla; Stir into dry ingredients just until moistened (batter will be stiff). Fold in apples.
  • Fill greased or paper-lined muffin cups three-fourths full.
  • In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over batter.
  • Bake at 375 degrees for 15-20 minutes. or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.
  • Combine glaze ingredients; drizzle over muffins.
  • Enjoy!
