Apple Squares or Apple Coffee Cake

A neighbor brought these over as a thank-you gift when we helped them shovel out last winter. We all enjoyed them very much. Original recipe calls for 1 1/2 cups sugar but cut back on it since we use it for a coffeecake.

  1. Combine sugar and eggs.
  2. Stir in oil and vanilla.
  3. Combine flour, baking soda, cinnamon and salt and add to sugar mixture, stirring to combine.
  4. Stir in apples and walnuts.
  5. Spread evenly in an ungreased 13x9-inch pan.
  6. Bake at 375°F for 45-50 minutes.

These didn't turn out like i expected them to. i followed the recipe exactly, but it still turned out to be very dry.

I was excited to make this being as though I have a lot of extra apples on hand and it seemed fairly easy. I did not like the floury taste that resulted as a lack of spice and flavor. Maybe next time I will add pumpkin, more spice, or something else. I even added a "strudel" topping and it still tasted like apple flour.

Yum! Tastes a lot more complex and decadent than expected. I used Splenda and halved the oil content and substituted it with a 1/2 cup of chunky applesauce, to cut down on the fat. I baked it in a large cast-iron skillet and it came out wonderfully. I'll be making this one often, it's the best coffee cake I've had so far.
