Delicious, satisfying and didn't miss the fat a bit. Used fresh pineapple and dried cranberries.
This is really good. I made it because I had everything on hand and needed to use up some apples. I forgot to put the mayo in the dressing, so it was kinda juicy, but the flavor was delicious. I probably will continue to omit it because I didn't miss it. Very good! Thanks for posting.
I like the fact that this recipe is low-fat. The apples together with the pineapple was a pleasant mixture. Unfortunately, I think that it was also bland. The dressing could really use some more spice, sweet, tang (not to mention color)... something to bring out the flavors of the fruit and enliven the senses. Wish I could give it more than three stars.
Needed a quick complement to a dinner of hearty minestrone and was looking for something that relied on items I had on hand. Decided to go with apples and stumbled on this recipe. Though not attractive to look at, the salad was delicious. My version used fat free mayo and Greek yogurt to make it consistent with the WW Core program. A definite keeper.
Served this salad as dessert after a very heavy dinner and my guests were delighted. I used fuji apples which I think added more crunch and sweetness. This recipe's a keeper.
Pretty darn yummy! The sweetness of the pineapple juice really makes up for the lack of sugar, which I didn't miss at all. I didn't have any yogurt on hand, so I went ahead and used all mayo, and I used dried cranberries.
