Cold Fruit Soup
- 2 cups apple juice
- 2 large cooking apples, peeled and cubed
- 1⁄4 cup raisins
- 2 inches cinnamon sticks
- 1 tablespoon brown sugar
- 1 tablespoon brandy
- In a 2 quart saucepan combine the first 4 ingredients. Cover and simmer 15 minutes or until the apples are tender.
- Stir in brandy and sugar, cook until dissolved.
- Remove cinnamon stick before serving. You can also put this in the blender before serving if desired.
This recipe makes a nice tasting soup! I used Rome Beauty apples along with golden raisins & some apple brandy! Then, instead of the blender, I slightly mashed the apples with a potato masher so that it was somewhat chunky! [Tagged, made & reviewed as part of my RAISIN theme in My-3-Chefs]
