Apple Pumpkin Muffins

"A friend brought me these a few years ago and they have become a family favorite. They are not only great for breakfast, but for dessert also. They also freeze well."

directions

  • Mix together pumpkin, sugar, eggs and oil.
  • Add flour, soda, salt and pumpkin pie spice.
  • Mix until blended.
  • Add apples and chocolate chips.
  • Spoon into muffin tins.
  • Bake at 350 degrees for 15-20 minutes.

  1. Yummy! I used this as a base recipe, and made some of the changes that others did. Also replaced some of the choc chips with raisins, and added some rolled oats and shredded carrots to get more fibre in them for my kids. They were a hit!
     
  2. This was GREAT!!! i used applesauce instead of oil, and used some cinnamon apples i had canned earlier in the season. i also omitted the chocolate. but it made great muffins and a great cake! will use this again! FABULOUS!!!!
     
  3. Loved 'em! My husband requested a muffin that had apple in it, and this is just perfect. They rose beautifully and had a great texture. Unlike others, I used all the sugar ... we have terrible sweet tooth(s). I did use half whole wheat flour, but I don't think it hurt a thing. This is a definite keeper -- thanks for posting it!
     
  4. Made for PAC, Spring 2007 ~ I paid attention to previous reviewers & cut back a bit on the sugar, but not too much, 'cause the apples I used were tart! The resulting muffins were GREAT, & considering the amount of baking I've been doing, I decided to freeze half of them! Thanks for the recipe!
     
  5. I've always been a fan for anything pumpkin, and so naturally this recipe was very enticing (and I had some apples I needed to use up :)). However, I'm also one who tries to eat as healthy as I can so I made a few adjustments to the recipe. First, I exchanged the 1/4 C of oil for 1/2 C of applesauce, and secondly I used wheat flour instead of white and reduced the flour to about 2 1/4 C. I also thought 1 1/2 C of sugar was a bit much and only put in 3/4 C. (Don't worry they are still plenty sweet!). I loved them! And so did my husband! I'm definitely going to be making these again in the future! So for all of you that would enjoy a lowfat muffin, give it a try. It's also so convenient to freeze them and just pop a bag of them in the microwave for a fresh muffin!
