ingredients
- 236.59 ml pumpkin
- 354.88 ml sugar
- 2 eggs
- 59.14 ml oil
- 591.47 ml flour
- 4.92 ml baking soda
- 2.46 ml salt
- 14.79 ml pumpkin pie spice
- 473.18 ml chopped apples
- 236.59 ml chocolate chips
directions
- Mix together pumpkin, sugar, eggs and oil.
- Add flour, soda, salt and pumpkin pie spice.
- Mix until blended.
- Add apples and chocolate chips.
- Spoon into muffin tins.
- Bake at 350 degrees for 15-20 minutes.

Loved 'em! My husband requested a muffin that had apple in it, and this is just perfect. They rose beautifully and had a great texture. Unlike others, I used all the sugar ... we have terrible sweet tooth(s). I did use half whole wheat flour, but I don't think it hurt a thing. This is a definite keeper -- thanks for posting it!

I've always been a fan for anything pumpkin, and so naturally this recipe was very enticing (and I had some apples I needed to use up :)). However, I'm also one who tries to eat as healthy as I can so I made a few adjustments to the recipe. First, I exchanged the 1/4 C of oil for 1/2 C of applesauce, and secondly I used wheat flour instead of white and reduced the flour to about 2 1/4 C. I also thought 1 1/2 C of sugar was a bit much and only put in 3/4 C. (Don't worry they are still plenty sweet!). I loved them! And so did my husband! I'm definitely going to be making these again in the future! So for all of you that would enjoy a lowfat muffin, give it a try. It's also so convenient to freeze them and just pop a bag of them in the microwave for a fresh muffin!
