A friend brought me these a few years ago and they have become a family favorite. They are not only great for breakfast, but for dessert also. They also freeze well.

  1. Mix together pumpkin, sugar, eggs and oil.
  2. Add flour, soda, salt and pumpkin pie spice.
  3. Mix until blended.
  4. Add apples and chocolate chips.
  5. Spoon into muffin tins.
  6. Bake at 350 degrees for 15-20 minutes.

Yummy! I used this as a base recipe, and made some of the changes that others did. Also replaced some of the choc chips with raisins, and added some rolled oats and shredded carrots to get more fibre in them for my kids. They were a hit!

This was GREAT!!! i used applesauce instead of oil, and used some cinnamon apples i had canned earlier in the season. i also omitted the chocolate. but it made great muffins and a great cake! will use this again! FABULOUS!!!!

Loved 'em! My husband requested a muffin that had apple in it, and this is just perfect. They rose beautifully and had a great texture. Unlike others, I used all the sugar ... we have terrible sweet tooth(s). I did use half whole wheat flour, but I don't think it hurt a thing. This is a definite keeper -- thanks for posting it!
