Apple Pumpkin Muffins

A friend brought me these a few years ago and they have become a family favorite. They are not only great for breakfast, but for dessert also. They also freeze well.

Yummy! I used this as a base recipe, and made some of the changes that others did. Also replaced some of the choc chips with raisins, and added some rolled oats and shredded carrots to get more fibre in them for my kids. They were a hit!

  1. Mix together pumpkin, sugar, eggs and oil.
  2. Add flour, soda, salt and pumpkin pie spice.
  3. Mix until blended.
  4. Add apples and chocolate chips.
  5. Spoon into muffin tins.
  6. Bake at 350 degrees for 15-20 minutes.
