The original is at http://www.wholefoodmomonabudget.com/2014/01/apple-pie-muffins-made-with-oat-flour.html, but I changed it so much I wanted to get my version saved. It is refined sugar free and oil free. For the flour, I used 1/2 cup brown rice flour, 1/2 cup sorghum, 3/4 cup buckwheat and 1/4 cup flax. The original used all oat flour.

  1. Preheat oven to 375°. Spray 18 muffin cups with oil spray. Use silicon muffin cups if you have them.
  2. Combine flour, baking powder, baking soda, cinnamon, and nutmeg together in a small bowl.
  3. In a large bowl, combine the rest of the ingredients. Mix the dry into the wet ingredients until combined well.
  4. Bake for 25-30 minutes, or until toothpick inserted in center comes out clean. Cool on a baking rack.
