ingredients
- 3 eggs, well beaten
- 1 3⁄4 cups sugar
- 1 cup canola oil
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 4 apples, peeled and sliced
- 1⁄2 cup chopped walnuts
directions
- Mix ingredients in order given in a large mixing bowl then fold in apples and nuts.
- Spread in a 9 X 13" pan.
- Bake at 350° for 40 to 50 minutes.

Not sure what I did wrong but I didn't get a nice crisp top. Also I did not like the texture of the apples-they were still a little undercooked and hadn't absorbed much of the sugar or cinnamon. I guess I was expecting the apples to have more of an apple pie taste and texture. The next time I will 'stew' the apples first. I did not like this plain but it was nice with ice-cream and caramel sauce. Maybe I did something wrong.

Cant get any easier than this. Very moist cake mine was done in 50 minutes. Love the apples and nut combination, I used ground pecans. This recipe has ingredients that are always on hand in my pantry. Served it warm out of the oven topped with ice cream and caramel topping! Great idea for potluck or picnics. Thanks ElaineAnn for sharing your mom's recipe.

This is a terrific and simple cake to make. Just mix it all in one bowl and throw it in a pan! My cake was finished much sooner than the directions stated, but it was fine as I was watching it. Mine was cooked in 40 minutes. The apples and cinnamon smell great while this is baking, and the top has a light crunchy texture that we loved. No need to glaze the top, although I bet it would be good with a glaze too. Thanks for another great recipe Elaine!
