Apple Nut Carrot Muffins

Packed full of healthy ingredients, these muffins make a wonderful breakfast muffin with your cup of java.

Ingredients:

Serves: 18

Yield: 18.0 muffins

• 2 cups flour
• 1 cup sugar
• 2 teaspoons baking soda
• 2 teaspoons cinnamon
• ½ teaspoon salt
• 1 cup oil
• 2 cups shredded carrots
• 1 large apple , shredded
• ½ cup chopped walnuts
• 2 teaspoons vanilla
• ½ cup raisins
• 3 eggs

Directions:

1. Mix dry ingredients together.
2. Then add remaining and mix.
3. Fill muffin tins 2/3 full.
4. Bake at 350 degrees for 20-25 minutes.

These are nice moist muffins. I cut the oil back to 3/4 cup- my shredded carrots had been frozen and were very wet once thawed. My apple was a Braeburn... I wish that I'd had walnuts in the house but I didn't do I put in about 1/2 cut of oats. I left out the raisins, but I can see these as a wonderful chunky muffin when the walnuts and raisins are included. Some nutmeg might be good in here too. Almost forgot- I cut the sugar back to 3/4 cup also.
