These were really good! I made a few changes, using whole wheat pastry flour and buttermilk, and increasing the brown sugar. I cut the recipe in half and it made 7 muffins. I would definitely suggest adding more cinnamon and doubling the apples. Overall though, these are great muffins and I will be making them again for sure.
Nice tasting muffin. I halved the recipe and made 6 muffins. I agree that they aren't sweet and I would also try adding a bit more sugar next time. I will make these again! Thanks!
Delicious and nutritious! All I might change next time is add a little more sugar, but otherwise I loved the off-beat spicy apple flavour.
These muffins were very good. They are not very sweet, so if a sweeter muffin is desired, increase the sugar. My family prefers a sweeter muffin, so I will be increasing the sugar next time. Also, I added 1/4 tsp of PaulaG's Baking Spice Blend Mix Baking Spice Blend Mix to give it a little extra spice. I think these would be good with a little cinnamon/sugar sprinkled on the tops of the muffins before baking. I baked these in a cast iron "mini" muffin pan at 375ÂºF for 12 min. (cast iron cooks a little hotter). This recipe made 18 "mini" muffins. My family enjoyed these muffins and I will be making them again. Thank you for sharing.
