- 1814.36 g lean pork (I buy whole loins)
- 453.59 g pork fat (trimmings)
- 27.10 ml salt
- 29.58 ml parsley, dried
- 19.71 ml granulated garlic
- 9.85 ml sage, ground
- 9.85 ml black pepper, ground
- 9.85 ml rosemary, ground
- 4.92 ml marjoram, ground
- 14.79 ml paprika (I use smoked)
- 2.46 ml ginger, ground
- 2.46 ml celery seed, whole
- 78.78 ml white wine or 78.78 ml apple juice
- 44.37 ml pure maple syrup
- 44.37 ml applesauce
- 29.58 ml lemon juice
directions
- Cut pork into 2 inch pieces and the fat into 1 inch cubes.
- Grind through a 1/4 inch grinding plate.
- You can use a food processor-pulse in SMALL batches.
- In a small mixing bowl combine the wine, maple syrup, lemon juice and salt/spices.
- Whisk well.
- In a large mixing bowl combine the meat and wine/spice mixture.
- Mix well to combine.
- Cover bowl and place in refrigerator for 2 hours, up to 24 hours.
- The longer the better.
- Package in 1 pound amounts and freeze.
