did this for zwt9 awesome i used pita chips with mine and set mine on bed of lettuce ...TERRIFIC RECIPE.....great for two people or a crowd

This chicken salad has the "wow factor." Let me explain. I really did not want to add the scotch bonnet because they are really, really hot. The salad tasted fine as it was. So I added it anyway. Sure it is hot, but in a good way. Wow.

There are so many great things going on in this chicken salad. We loved the crunch of the celery and onion, the sweetness of the mango and apple, and the zing from the hanbanero. I made this as written, except I was more generous with the seasonings, especially the curry. This made a wonderful lunch served over a bed of lettuce.
