  • Preheat oven to 450 degrees.
  • Make the crust:

  • Mix the flour, sugar, and salt well in a large bowl.
  • Add the vanilla and butter, a little at a time.
  • Press into a 9 x 13 inch baking pan which has been greased and floured.
  • Bake in the oven until slightly golden, about 12 to 15 minutes.
  • Cool.
  • Lower the oven temperature to 400 degrees.
  • Make the Filling:

  • Place the cream cheese, sugar, and vanilla in a bowl and beat until creamy.
  • Add the egg to the filling and mix until blended.
  • Pour the filling over the cooled crust.
  • In a small bowl mix the sugar and cinnamon.
  • Place the sliced apples on top of the filling in two or three columns.
  • Sprinkle with the cinnamon sugar and transfer to the oven.
  • Bake until firm and a rich brown, about 20 minutes.

I am a 47 year old gal who owns a mini-horse farm in Pierre near the Black Hills. I own a dog named Einstein and 2 cats named Hatty and Bonnet. I have one DD and a SIL and a gaggle of grandchildren. I love crafts, quilting, sending care packages and all the other things we mommies do for love, family and friends. I currently own my own home but have traveled and lived in Canada, Florida, North Carolina, Washington, and Michigan. You name it and I bet I have passed through it. I am very patriotic and I have served in the military and have relatives serving overseas. Life has not always been a bowl of cherries for me; I weighed into the world at 2 pounds 3 ounces and have never looked back. I am currently 5 foot something and I weigh in at a non-disclosed weight…not that I mind disclosing it but I get confused between the pounds, the kilos, and the stones. I am my own woman and am not ashamed of where I’ve been throughout my life…I grown from my mistakes and am a better person for it. I believe that love and laughter can cure many ailments and I believe in having a positive outlook on life. I love to sing…in fact myself and two of my dear friends; Cookin4my3boys and NCMysteryShopper all started performing country music when we were but wee lasses at the young ages of 4, 5, and 6. Would you believe I have a shoe fetish? I know it’s impossible to fathom. I collect shoes like the fleas on Einstein…you know…my dog. Well not as many as the lady from the Philippines did…but one of my closets has over 173 pair in it. I love new adventures, antique cars, mystery tours, analyzing & solving problems, especially mathematical problems, jigsaw puzzles, deep water aqua size, burgers and being a genuine friend. When I was a kid I had a mini horse named Foxy Roxy who slept at the foot of my bed. Nope I was 4 years old and she used to come to my sliding glass door and I would let her in and she would sleep in my room. I loved her to death…she was 38 when she died. She would lie on the floor in front of the couch and share Doritos with my dad and watch football.
