Apple Honey Vinaigrette

ingredients
- 2 cups oil
- 2⁄3 cup apple cider vinegar
- 1⁄3 cup apple juice
- 3 tablespoons liquid honey
- 2 tablespoons Dijon mustard
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
directions
- Whirl all ingredients in a blender until smooth. Pour into sterile jars of decorative bottles with snug fitting lids. Store in the fridge for 1 month.
- Shake well before using!

Like this vinaigrette for the fruity notes of apple in it. The honey balanced well the tart notes of the vinegar. And the Dijon mustard adds a wonderful sharpness. I have had the vinaigrette with arugula (rocket) and it makes a great combination. In my opinion this vinaigrette is fantastic for salads like rocket or chicory. Thanks for sharing. Comment on my photo: this was little experiment and fun to make.
