Apple Ham Salad

"This is a really delicious salad. Great way of using up apples and that last bit of ham in the fridge. It was adapted from The Best of Country Cooking. Cooking time is time spent in the fridge. You may also want to add a finely minced garlic clove."

ingredients

  • 3 cups chopped up apples (I've used NZ Beauty)
  • 1 cup ham (I buy the sausage/ham ends at the Deli for this purpose. Cheaper but just as good)
  • 2 tablespoons green onions, chopped
  • 3 tablespoons oil
  • 1 tablespoon apple cider vinegar

directions

  • Mix everything together with salt and pepper to taste and chill for about 1 hour.
  • Eat.
  • If you like, you may double the oil and vinegar amount.

  4. Thanks for your recipe! It was very light and fresh, perfect for the hot weather! I made additions to it though, which i think made it even better! I happened to have some leftover penni pasta, which i cut into small slices and added in! I also didn't have green onions at home, so i just added a bit of onion. I also added some dried parsley, a tad of oregano, ground black pepper and since i didn't have the apple cider vinegar, i used red wine vinegar. It was delicious! I used one apple only, about a cup of penni, and at least 3/4 cup of ham! That was enough for 2 as a main dish.

Hey Everyone! Greetings from Sunny Singapore! I'm am so glad to have found this site. It is waaaayyy better than other sites I've been. I have about 240 cookbooks and my faves are the older cookbooks I got from my mom as I prefer from scratch cooking. I have created several cookbooks dedicated to the use of eggs. I have come across a number of recipes requests for using up lots of eggs. I won first prize with that orange costume! The one with the (fake) Tattoos was taken in Dec 2007 when I again won first prize. I love spicy food and the many different kinds of chilli dips different foods calls for!! Love baking, cross stitching, trying my hand now in shoe beading and patchwork and now doing a course on aromatherapy. Oh and am now trying to raise a flower and herb garden but it is not easy as I am a newbie at that too! In some of my recipes, you will note that there is a letter in brackets at the beginning of the name. This is what it means : (A) : Aromatherapy/Homeopathic/Less toxic I'm not crazy about recipes using pre-mix cakes as I am a more from-scratch person. My recipes will have the local name (when applicable) as well as the anglicised name, eg "Au Nee (Sweet Yam Paste). If I had a month off, I'd be in Texas.
