  1. Combine raisins, orange juice, crystallized ginger, cinnamon, apple, banana, orange juice concentrate, and lemon juice in a large bowl.
  2. Let sit at least 1 hour.
  3. Add milk and egg.
  4. Combine whole wheat and soy flours and baking powder.
  5. Add to liquid mixture.
  6. Fill muffin tins 2/3 full.
  7. Bake at 375 degrees for 15-18 minutes.

Made these for my dentist,as no fat,sugar,or salt in recipe they were abit flat..Perhaps an omission....Don Steele
