Apple Fritters with Cream Sauce

- 1 cup apple juice
- 1 teaspoon cornstarch
- 2 eggs
- 1 tablespoon sugar, white
- 4 large apples
- 2 eggs
- 100 g dried coconut flakes or 100 g breadcrumbs
- 3 tablespoons butter
- 2 tablespoons powdered sugar
directions
- For the cream sauce, combine the first four ingredients in a sauce pan and bring to a boil, stirring constantly.
- Remove from heat and let it cool.
- For the fritters, peel and core the apple using an apple corer.
- Slice crosswise into 1/2 inch-thick rings.
- In a bowl, beat the eggs.
- Dip apple slices in egg and coat with coconut flakes.
- Pan-fry in butter until golden brown on both side.
- Arrange on a serving plate and serve warm with cream sauce.
