This cake is so simple to throw together and is delicious served with vanilla ice cream.
- 1 1⁄2 cups sugar
- 1 1⁄4 cups vegetable oil
- 2 eggs
- 3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 3 cups diced apples
- 1 cup chopped nuts
- 1 cup raisins
- Preheat oven to 350 degrees.
- Put all ingredients into a large bowl.
- Mix with your hands as you would a meatloaf, gently but thoroughly; do not use a spoon or mixer.
- Bake in an ungreased 9x13 inch pan for 1 hour.
- Cool before cutting.
I had plenty of apples on hand and decided to make this cake for one of my dad's friends as soon as I got hold of the recipe. This cake baked beautifully and my house smelt wonderful while it baked. I had a box full of Asian pears from my lovely Korean neighbors for Chuseok, so I used those instead of apples. Also, only used 1 cup of oil and I didn't have any nuts. I sprinkled some brown sugar over the top before I put it in the oven. It was so yummy. Perfect consistency. Not too gooey, not too cakey. Also, I only baked it for 45 minutes.
My husband is the baker in this house, I wanted to make a treat for him and this recipe had all of his faves in it and looked easy enough for me to attempt. I was a little intimidated by the amount of oil so I substituted 1 cup of oil with 1 cup of apple sauce and it turned out wonderful. I didn't put in any nuts because I didn't have them. I also used a spoon, I just couldn't wrap my mind around sticking my hands into it. lol I found that I only needed to bake it for 35 minutes, I'm not sure if this was because of the substitution. Very nice, easy cake---thanks!
